Cookery (Professional) Advanced Technical Diploma Level 3 at Bexhill College

Course description

This course is designed to build on the professional catering kitchen larder skills learnt at Level 2, developing skills and knowledge needed to work as a chef in a professional kitchen. The qualification aims to help you enter employment with a higher level of understanding and responsibility or at a more prestigious establishment. The Hospitality and Catering Industry is competitive, the advantage lies with those chefs who successfully attain both higher level qualifications and skills, alongside concrete industrial experience. The Level 3 Advanced Diploma will help provide you with a qualification, skills and experience to progress your career and give you a competitive edge. The course includes practical skills, underpinning theory development and industrial work placement experience.                                    


Course content

This qualification will help you develop advanced skills and techniques to produce dishes using a variety of commodities.
The topics that will be undertaken develop advanced skills, knowledge and techniques in producing:

  • Vegetables and vegetarian dishes
  • Meat and offal dishes
  • Poultry and game dishes
  • Fish and shellfish dishes
  • Exploring gastronomy
  • Supervisory Skills
  • Legal and social responsibilities in the professional kitchen
  • Food product development

Entry requirements

You are likely to have previous experience and/or a relevant Level 2 Technical Certificate in Professional Cookery or equivalent qualification.


The practical elements of this course are assessed by means of timed assessments, the preparation and cooking of individual dishes and synoptic exams. Other types of assessments include research assignments, written question papers, small projects and presentations.

Financial information

There is a top up catering uniform and small equipment to their Level 2 uniform and equipment, this can be purchased through the College. Students will also be advised to hire a locker and obtain print credits.

Future opportunities

You could enter employment as a chef within the catering section of high end establishments, such as Fine Dining Restaurants, Michelin Star/Rosette Restaurants, Luxury Hotels or Cruise Liners. You may have the opportunity to undertake further learning, such as Higher Education, Foundation Degrees, Level 4 qualifications, or an Advanced Apprenticeship.
