Introduction to Professional Cookery Level 1 Diploma at Aylesbury College

Course description

Learn the basic skills in professional cookery that will take you through your career and life itself allowing you to impress family, girlfriends/boyfriends, friends and more importantly future employers. By completing this City & Guilds’ industry standard qualification, you will gain the knowledge and skills to begin an exciting career and become a professional chef. This course is for anyone who wants to be a chef in the catering and hospitality sector and it is ideal for learners coming straight from school who wish to seek a career in this industry.

Course content

You’ll gain a high standard of cookery skills including: vegetable preparation, basic cookery techniques including braising, stewing, frying, roasting, basic butchery skills and fishmongery skills. In addition, you will also complete the Chartered Institute of Environmental Health Level 2 Food Safety Award, which is a must for all food handlers. You will also have the opportunity to work in our training restaurant Harding’s, gaining valuable experience and customer service skills. You will also gain further academic learning and certification, completing English and Math applied skills and training.

Entry requirements

3 GCSEs at D or above, or an equivalent qualification. An enthusiasm and commitment to aspire in hospitality and the culinary arts.

Assessment

You will be graded in line with City & Guilds’ marking guides including: knowledge and understanding assignments, multiple choice tests, internally marked questions, B1-B6 individual practical tasks and two synoptic practical assessments.

Future opportunities

Our courses will prepare you for entry into the industry. On successful completion you would be able to progress onto a Level 2 Apprenticeship.

There are excellent career opportunities available to you upon completion of this programme including jobs within sectors such as fine dining, restaurant, gastropubs and industrial catering.
