Course description

You will study the following topics:

  • Maintaining food safety when storing, preparing and cooking food
  • Catering operations, costs and menu planning
  • Maintaining, handling and cleaning knives
  • Making basic stock
  • Processing ingredients prior to cooking
  • Preparing, cooking and finising meat, offal, fish, shellfish, poultry, fruit and vegetables
  • Preparing, cooking and finishing stocks, soups and sauces
  • Preparing and cooking rice, pasta, grains and egg dishes
  • Preparing and cooking a range of desserts and puddings
  • Preparing, cooking and finishing biscuits, cakes, pastries, sponges, scones, bread and dough products
  • Producing hot and cold desserts and puddings
  • Producing paste products
  • Healthier food and special diets
