Food and Beverage Service Apprenticeship Level 2 at New College Nottingham

Course description

If you're interested in training for a career in the hospitality industry, this Apprenticeship will give you the opportunity to learn the skills you need whilst earning a wage at the same time. You will also benefit from the support of a team of professional ncn assessors and your own employer.

This Apprenticeship is perfect if you want to develop your knowledge of the food and beverage service, developing skills such as cocktail making, serving hot drinks, and operating a bar.

Course content

This Apprenticeship will cover a range of beverage units including operating a bar, preparing and serving cocktails, hot drinks and food and wine pairing.


Mandatory units will cover health and safety and food hygiene, working effectively as part of a hospitality team and customer service.


As part of this training programme you can expect your employee to contribute towards the development of menus and recipes.

The course covers:

  • Level 2 Food & Beverage Service NVQ

  • Keyskills/Functional Skills

  • Technical Certificate

  • Employment Rights & Responsibilities (ERR)

  • Personal Learning & Thinking Skills (PLTS)


Food Service Optional Units (A):

  • Provide a counter & takeaway service

  • Serve food at the table

  • Provide a silver service

  • Provide a buffet & carvery service


Beverage Service Optional Units (B):

  • Serve alcoholic & soft drinks

  • Prepare & serve cocktails

  • Prepare & serve wines

  • Prepare & serve dispensed & instant hot drinks

  • Prepare & serve hot drinks using specialist equipment


There are also a number of optional units including

  • Prepare & clean areas for table service

  • Maintain cellars & kegs

  • Clean drinks dispense lines

  • Resolve customer service problems

  • Deal with customers across a language divide

  • Maintain & deal with payments


To achieve the full qualification you must attain a minimum of 37 credits in total. This comprises of:


  • All of the mandatory units (15 credits)

  • A minimum of 3 credits from section A

  • A minimum of 3 credits from section B

  • The remaining credits from either section A, B & C


Units will be discussed with your assessor and selected for the appropriate job role and training purpose.

Entry requirements

Students must: 

  • Be aged 16 or over
  • Not be in full-time education or on any other training programme
  • Have lived in the UK for the past three years
  • Students will be expected to have a contract to work a minimum of 30 hours per week. This must be paid employment. However, you can still apply for this course if you are actively seeking employment, but this must be in place before you can commence the training.

There are no formal entry requirements for any level, however the employer may stipulate entry qualifications when recruiting an apprentice to a particular job role. 

As there may be different entry requirements for apprenticeships, depending on the occupational sector, all students are required to have an initial assessment test.


The workplace tutor continually assesses your practical and theory work.  An internal verifier will visit you to monitor your progress. You are required to keep a portfolio of evidence generated in the workplace.
