Course description

Are you interested in food, cooking and providing a quality service within the Catering industry? Would you like to gain a qualification that will progress your knowledge of food preparation? This could be the course for you! 
The Level 2 Diploma seeks to build on the knowledge, training and enthusiasm you already have for cookery and will teach you how to prepare new types of food and sauces. You will also develop your knowledge of health and safety and how the catering and hospitality industry operates. 
This course aims to give you the skills and confidence to be able to seek employment once you have successfully completed it. It also seeks to give you the grounding and knowledge required to apply for the Level 3 courses, which will teach you management/supervisory skills as well as advanced cookery techniques.

On this course you will learn about:

  • Preparing and cooking stocks, soups and sauces
  • Preparing and cooking fruit and vegetables
  • Preparing and cooking meat and offal
  • Preparing and cooking fish and shellfish
  • Preparing and cooking pasta, grains and rice
  • Preparing and cooking desserts, puddings and bakery products
  • Healthier eating and special diets
  • Food safety
  • Health and safety
  • Investigating the hospitality industry
  • Kitchen operations, costs and menu planning
  • Food and Beverage Service
  • Legislation
  • Dealing with payments and bookings

Entry requirements

5 GCSEs at grade E. Minimum grade C in GCSE English or GCSE Mathematics, or an equivalent Level 1 qualification in the same vocational subject.

Interview for entry: Interview required

Assessment

This course is testing of food preparation and cooking skills and written assignments.

Financial information

There is a kit cost to students which is around £300 for chef whites and knives and front of house uniform.

Future opportunities

After successfully completing this course, you may wish to apply for one of the Level 3 courses on offer at City College. These will equip you with the skills and knowledge required to confidently apply for supervisory/management positions and to take your technical skill to an advanced level. 
Alternatively, this course will prepare you to apply for one of the many jobs in the Catering industry, across wide sectors such as restaurants, hotels, contract catering, industrial and airline catering.
