Course description

This is a Technical Certificate which provides learners with a broad range of underpinning occupational knowledge and practical application that is required by employers to work within the profession of the Catering and Hospitality Industry.

At level 2 – you will enter the world of Haute Cuisine, an exciting and creative opportunity to develop culinary skills, understand the value of food, flavours and nutrition, be creative, prepare, cook and present food.

You will undertake practical tasks using a wide variety of ingredients both local and from around the world to Plan, Prepare, Cook and Serve 3-5 course meals for lunch and dinner and cater for events.

You will learn Menu Planning, Costing, Food Safety, Health and Safety, and how to cater for healthier and special diets. You will develop skills around maintaining and managing personal attributes for managing oneself: time management, personal appearance and self-development.

Course content

This course will appeal to learners who have a desire or interest of working within the food industry, enjoy team work and working independently and thrive on challenge, enjoy tasting food, being creative and experimenting with new foods and flavours, adaptable under pressure. Learners will be required to build a portfolio of evidence, assessed through written assignments and practical tasks to successfully achieve this award.

Future opportunities

Achievement of this qualification prepares individuals to enter the Catering and Hospitality sector with potential to progress to full time employment working in professional cookery, chef based roles, within a restaurant, hotel or within conference and banqueting events companies using the skills and knowledge they have acquired: Commie Chef, Demi Chef de Partie.
This qualification could prepare you for careers and further educational qualifications specialising and advancing careers in:
• Culinary Skills
• Food Beverage and Professional Cookery
• Food and Beverage Service
• Professional Patisserie and Confectionery
• Advancing to Supervisory based roles, further development and promotion of Demi Chef de Partie and Sous Chef with Level 3 Diploma in Advanced Professional Cookery.
