Professional Cookery VRQ Level 2 Diploma at Harlow College

Course description

This hands-on programme will equip you with the skills and knowledge to help you become a professional chef. It will open doors to various sectors of the food industry and provide you with many workplace essentials. Throughout this course you will gain high standard cookery skills in our state-of-the art facilities, alongside other fundamental knowledge in; hygiene, health & safety, teamwork and customer care.

You will have some basic skills and experience as a chef, probably from a role where you work under supervision. You will be looking to gain a formal qualification and increase your skills so that you can take on a more senior role.

Course content

Core modules

  • Investigate the hospitality & catering industry
  • Food safety in catering
  • Health & safety in catering
  • Nutritional and special diets
  • Kitchen operations, costs & menu planning
  • Prepare & cook complex sauces, soups, stocks, vegetables, pulses, meat, offal, poultry, fish, shellfish, rice, pasta, grains, eggs, desserts, puddings and bakery products.

All students will complete Functional Skills in English and Maths

Entry requirements

4 GCSEs Grades D and E or equivalent and minimum Level 1 diagnostic in Maths and English.

A satisfactory pass at NVQ 1 or Introductory Diploma.


Practical assessment, short answer tests and written assignments.

Financial information

Uniform, books and equipment - £280. Educational visits - £50. Locker - £10.

Future opportunities

VRQ Level 3 Diploma in Advanced Professional Cookery. Employment as a chef in hotels, restaurants or industrial catering establishments, either at home or overseas.
