Professional Cookery Finesse Academy-Introductory Diploma at Derby College
This course will help develop your knowledge and practical abilities in a wide variety of preparation and cooking methods. It also covers food safety, health and safety, and employability skills.
In addition to attending College, you will develop a wide variety of skills and experience working at the Finesse hotel.
You will cover a wide range of topics including food safety, developing skills for employment, health and safety, healthy foods and special diets, and preparing and cooking foods via a variety of cooking methods. Units include for example:
- Prepare and cook foods by boiling, poaching and steaming
- Prepare and cook foods by stewing and braising
- Prepare and cook foods by baking, roasting and grilling
- Prepare and cook foods by deep frying and shallow frying
The course also features work experience and tutorial sessions.
You will need Maths and English GCSE at grade C or above. It is essential that you show a commitment to maintaining high standards of attendance.
Assessment will entail a variety of methods including assignments, tests and practical tasks.
You can progress to the Intermediate Diploma in Professional Cookery or to an apprenticeship.
You can advance your career in a variety of roles within a kitchen.
