Course description

This qualification is an exciting opportunity to further develop your skills and attributes learnt at Level 1.  You'll learn further about the next level of job opportunities within the industry, gaining valuable practical and teamwork skills alongside developing your own personal qualities and employability skills.  You will take part in activities which are interesting and fun and that will help you to get ready for progression on to a higher level course in college or preparation for work. The course gives you an insight into developing your cookery skills across a wide range of commodities. You will also develop your customer service skills and knowledge of food and beverage whilst working in the college reatauartnt

As part of the course you will study English and Maths to improve on your existing skills in order to reach your full potential to work confidently and independently in whatever future career pathway you decide.

Course content

This is a one year course delivered over 3 days plus directed study, on-line learning and work experience

  • Basic food preparation and skills covering; meat, fish, vegetables, soups, stocks, sauces, rice, pasta and hot and cold desserts
  • Food Hygiene
  • Teamwork
  • Food and Beverage Service
  • Customer Service


 Theoretical aspects of the course will mainly be assessed through assignments and short answer questions which are internally marked. Individual practice tests will take place throughout the course

Future opportunities

On successful completion of the course you will have the opportunity to apply for the Level 2 Diploma in Professional Cookery, L2 Diploma in Food and Beverage, an Apprenticeship or employment within the catering and hospitality industry such as:

 • Coffee shop - Team member, Barista

• Hotels - Junior chef, kitchen porter, restaurant, bar, reception

• Events - Team member, host, chef, restaurant, bar

• Fast food outlets - Crew member 

• Pubs and bars - bar person, Junior chef, host

• Holiday Parks  - Junior chef, bar, host, reception

• Visitor attractions - Team member, customer service, kitchen assistant
