Course description
This course is designed for students who have completed an NVQ programme at Level 1, or those who already hold basic skills and wish to proceed to this intermediate stage.
On completion of this programme you may progress to a higher level programme or commence a career in industry.
Course content
Working within our professional and realistic working environment; which includes, Larder, Pastry and Production Kitchens, you will cover a variety of food modules; these may include:
- Preparing & cooking fish dishes
- Hot & cold desserts
- Meat & poultry dishes
- Pastry products
- Preparing & cooking fresh soups
- Maintaining safety
- Fresh pasta dishes
- Fresh vegetable dishes
- Professional knife handling
Entry requirements
Usually, this will be for students who have achieved an NVQ in Food Preparation and cooking at Level 1
Further information
In the past students have had opportunities to:
- Work with Chefs such as Richard Corrigan
- Visit France for Champagne tasting
- Attend food fayres
- Visit London’s Borough Market
