This follow on programme will develop the knowledge and skills you learned on the level 1 VRQ Diploma in Professional Cookery. This will enhance your career potential in the hospitality and catering industry as a chef or restaurateur.
This course develops your practical skills in both food preparation and cooking and food and beverage service through training in the college’s purpose-built kitchens and restaurants, giving you greater confidence for working in the industry. There are practical elements, including the preparation and cooking of meat, fish, poultry, vegetables, soups, stocks, sauces and bakery, and theory based elements to underpin what you learn in the practical classes, including menu planning, costings and kitchen operations.
You will learn to cook in a professional environment supported by a team of experienced tutors. You will be trained to give a high standard of service in the training restaurants, which includes barista service.
A minimum of 4 GCSEs with the following grades: English and maths at 4 or above, and 2 other GCSEs grade 4 or above.
- complete written work,
- do presentations,
- have your skills assessed practically,
- carry out assignments, demonstrating your subject knowledge and skills.
The assignments will be graded pass, merit or distinctions. You will need at least a pass in every task to complete an assignment.
- VRQ Advanced Professional Cookery - Kitchen and Larder or Pastry and Confectionery level 3, or
- an Advanced Apprenticeship.
