Culinary Skills CG Diploma Level 3 at Cornwall College

Course description

Ideal if: you have experience of working in a kitchen and woud like to learn advanced skills in preparing and cooking complex dishes, store keeping and supervisory skills.

You'll need: the City & Guilds Level 2 Diploma in Food Preparation and Production or are working in a first-class establishment. Equally, you can be a mature student who has the right drive and commitment to succeed and who wants to achieve a nationally recognised qualification.

You'll learn: how to increase your key skills in a specialised area.  Being a very practical course in its approach, the content allows you to learn advanced techniques that meet both national and international standards. 

Expect: to be assessed throughout your course through assignments, projects and practical examinations.

You'll love: learning the techniques you will need to have, to work as a specialised chef in a professional kitchen.

You'll go onto: employment in the industry, or further studies at Foundation Degree level.

Course content

The course is designed for students with a basic knowledge of cookery and who wish to increase their skills in a specialised area. It is very practical in content and allows the students to learn advanced techniques that will meet both national and international standards. The course is designed to be completed in 1 year and the units covered may be different depending on which site you choose to study at.

  • Sustainability in Professional Kitchens level 3
  • Food science and molecular cookery
  • Menu planning and food costing
  • Allergen training
  • Butchery work shop
  • Fish and shell fish work shop

Entry requirements

There are no formal entry requirements. However, because of the advanced nature of the course it is advisable that you are either the holder of NVQ level-2 Food Preparation and Production or City and Guilds 706/1 and 706/2 or are already working in a first class establishment. Equally, you can be a mature student who may never have attended college and would like to gain a nationally recognised qualification. In all cases real enthusiasm for the industry and a love of food is vital.

Future opportunities

After successfully completing the NVQ 3 and with sufficient industry experience you will have the opportunity to progress onto a Foundation Degree. This qualification will also enable you to apply for positions in first class establishments with the knowledge that the qualification will enhance your job prospects.
