Professional Cookery Level 2 Diploma at Havering College of Further and Higher Education
Ideally you will have already completed a more basic cookery course or have a good experience of cooking either in the home or in industry.
This is a professional cookery course designed for learners who have some experience of cookery. It equips you with the skills required to prepare and cook food in a range of industry environments.
NVQ Level 1 Food Preparation and Cookery or appropriate experience. You will need to complete a satisfactory interview and reference to gain a place on the course.
Assessment is by practical observations in the kitchen and restaurant and online mini tests.
Compulsory subjects include:
- Professional cookery;
- A compulsory Work Placement;
- Food and Drink Service;
- Health and Safety in the Workplace;
- A broad range of Cookery subjects including:
- Poultry, Meat and Fish;
- Soups, Desserts, Sauces and Pastry.
This course can lead to an appropriate level 3 programme here at the college or employment in the catering industry.
