Professional Cookery Skills Certificate Level 2 at The Manchester College

Course description

The VTCT Level 2 Certificate in Hospitality and Catering Principles (Food Production and Cooking) (QCF) is a knowledge-based qualification that has been designed to support practical-based qualifications in hospitality and catering.Building on the foundation skills you will have developed on our Level 1 certificate or diploma, this 36-week full-time course, starting in September 2017, will give you the skills you need to further enhance your food safety and catering abilities. You will learn about the importance of a safe, hygienic and secure working environments, how to work as part of a team, how to apply for a job and prepare for a successful interview.You’ll also learn the principles of producing various dishes using meat, pastry and basic cakes and sponges with optional cooking units available.


In order to make sure you’re comfortable learning the skills on this course, you’ll need to already have a Level 1 certificate or diploma in food production/cookery, or at least 1 years’ experience working in a professional catering or hospitality environment. You’ll also need to have GCSEs at grade A – C in Maths and English Language, or be working towards a level 2 qualification in literacy and numeracy.

Financial information

Throughout this course, you will build a portfolio of work. You will also be assessed through practical tests in a workplace or realistic working environment.

Once you’ve completed this certificate, you’ll be well equipped to begin your career in the hospitality industry. You’ll also have the qualifications needed to study a higher level course with us at The Manchester College, such as our VTCT Level 3 Diploma in Hospitality Supervision and Leadership or VTCT Level 3 Advanced Professional Cookery. With the advanced skills you’ve learnt, you’ll be able to work across the industry in restaurants, hotels and commercial catering organisations, succeeding in a wide variety of career options to suit your interests and abilities.       Openshaw is a suburb of east Manchester, a short bus ride from Manchester’s city centre. Openshaw Campus is built at the heart of the community with an open plan design and attractive green space and water features. Sportcity and the City of Manchester Stadium are close to the campus. Sportcity has a number of sports venues and fitness and sports facilities for the public. There is a 14-screen cinema five minutes away by car or 25 minutes on foot.
