Course description

The course will allow the candidate to experience top levels of catering in an appropriate realistic working environment. Related kitchen theory and underpinning knowledge will be incorporated into practical sessions as well as the more traditional lecture.

Course content

The course is comprised of the following practical units:

  • The principles of food safety supervision for catering
  • Practical gastronomy
  • Advanced skills and techniques in producing vegetable and vegetarian dishes
  • Advanced skills and techniques in producing meat dishes
  • Advanced skills and techniques in producing poultry and game dishes
  • Advanced skills and techniques in producing fish and shellfish
  • Produce fermented dough and batter products
  • Produce petit fours
  • Produce paste products
  • Produce hot, cold and frozen desserts
  • Produce biscuit, cake and sponges
  • Food product development

Entry requirements

This course would be suitable for any student who has completed Level 2 or appropriate trade/industrial experience, and holds a level 2 Food Safety qualification. Good study skills are required to answer the short answer question papers

Reasonable ICT skills are required to be able to produce the written assignments
