Food Production and Cooking Apprenticeship Level 2 Diploma at Middlesbrough College

Course description

Apprenticeships allow 16+ year olds to start work and earn a wage, while learning new skills that lead to nationally recognised qualifications. Apprenticeships are designed with the help of employers in the industry, so they offer a structured programme that takes Apprentices through the skills needed to do a job well. Most of an Apprentice's training takes place on the job but they will also have to complete off-the-job training within College. English and Maths will be included in the programme. The course will cover aspects of: Maintain a safe, hygienic and secure working environment Work effectively as part of a hospitality team Preparing and cooking, cakes, biscuits, scones, meat dishes, pasta dishes, bread and dough products and various other dishes.. Opening and closing the kitchen Kitchen Documantation Customer service Countertakeaway Food Safety Employment Rights and Responsibilities Taking payments All Apprentices must be employed for the Apprenticeship Training with a contract of employment of normally a minimum of 30 hours per week. The Employer pays a minimum of £2.73 (correct as of 1 August 2015) per hour to the Apprentice for the first 12 months. This is also an Agreement to a day release to attend College and this can be reviewed depending on each programme, Agreement to plan, review and support training in the workplace is also part of the Apprenticeship Programme.

Entry requirements

An interest in working within the catering and hospitality industry. For level two it’s a requirement to have at least 4 GCSE at grades A*-D with at least one being English or Maths. "If you do not have a Grade A to C in English and/or Maths, you will be required to continue studying these subjects as part of your Study Programme."

Assessment

Skills are assessed in the work place and through a portfolio of evidence, on line testing and a portfolio for key skills with an end test.

Future opportunities

Progression will be to the Level 3 NVQ Diploma in Professional Cookery or Diploma in Hospitality Leadership and Supervision
