Professional Pastry Skills Level 2 at Trafford College

Course description

Students learn through working a combination of real life working environment, skills sessions and theory classes.Units include: Health, safety and security; Effective teamwork, maintain food safety, Storing, preparing and cooking food; Preparation and cooking of bread and dough products; Preparation and cooking of pastry products; Preparation and cooking of cakes, sponges and scones; Preparation and cooking of hot and cold desserts; Preparation and baking of dough and tray bake products (plus ABC Level 1 Cake Decoration Course).Functional Skills requirement. To prepare you for a higher level course, employment or university you maybe e required to achieve a key skill qualification in maths and English equivalent to a level 2. Will attend GCSE maths and English.

Entry requirements

5 GCSEs at Grade D or above including maths and English.

Assessment

Assessment is continuous by observation of practical skills in the pastry real work environment areas. Students will also complete multiple choice tests.On successful completion you will achieve Food Processing & Cooking (Pastry & Confectionery) Level 2 and Food Safety in Catering CIEH Level 2 Award.Examining/Validating Body: City & Guilds.

Future opportunities

On successful completion of this programme, students have the option of progressing onto a Level 3 programme or entering the workplace. You have the choice of the following progression routes at Level 3: specialising in Pastry and Confectionery, Kitchen and Larder, Advanced Apprenticeship, Restaurant Supervision or alternatively, Hotel, Events and Restaurateur Extended Diploma.
