Professional Cookery Apprenticeship Level 3 at Stratford-upon-Avon College
Our Level 3 Advanced Apprenticeship in Professional Cookery will allow you to further your career within the Hospitality and Catering industry and gain industry standard qualifications.
Our course will equip you with the skills and knowledge to lead within the kitchen. You’ll further your knowledge and learn specialist techniques to enable you to become more effective in the workplace, ranging from preparing food, cooking a range of meats, fish, shellfish, game and vegetables. You’ll broaden your understanding of all aspects of kitchen operations, essential for those aspiring to progress to Head Chef. Alongside this, you’ll also learn more senior workplace skills, such designing a menu, dealing with costings and ordering stock.
This Advanced Apprenticeship in Professional Cookery is aimed at anyone who currently works as a chef in the catering and hospitality sector. It is ideal for chefs who would like to continue gaining knowledge and experience within a more senior role and for those who wish to specialise in a particular topics, such as preparing, cooking and finishing a range of complex dishes, including sauces and managing hygiene standards.
This Apprenticeship Framework consists of the following components:
NVQ Level 3 NVQ Diploma in Professional
Cookery (Preparation and Cooking)
Technical Certificate Level 3 Technical Certificate in the Principles of the Hospitality and Catering Sector (Professional Chefs)
*Functional Skills Level 2 in Mathematics and Level 2 in English
*Functional Skills are only applicable to learners who have not already achieved GCSE grade A-C in English and Maths (or equivalent).
o achieve the NVQ element of this course, you will be required to complete a series of complex units which are then assessed in conjunction with observations in the workplace. This is to ensure you are able to demonstrate practical skills and knowledge at an advanced level. Learners will also have the opportunity to once a week, participate in a skills class at College, where knowledge and skills can be re-enforced and demonstrated in a controlled setting.
To achieve the Technical Certificate and Functional Skill components, you will be required to undergo a series of formal tests. All knowledge required to achieve these components will be gained alongside the NVQ. Testing will commence at College and you may be required to attend Functional Skill session at College.
