Professional Cookery Level 1 Diploma at Southport College

Course description

This Course is aimed at those who want to pursue a career in professional cookery or in the hospitality industry. Culinary skills will be developed either in our commercial licensed restaurant or workshops alongside theory assignments which will give a broad understanding of the industry. 

Course content

The course is made up of a number of individual units. 
Three units are linked to personal and social development and are:
*Undertaking an Enterprise project- Includes all aspects from planning and advertidsing to selling a product.
*Healthy Lifestyles- including diet and fitness
*Developing Personal Confidence and Self Awareness- Including strengths, weaknesses and setting personal goals 

The vocational units include a variety of practical skills to introduce and develop skills in Professional Cookery .They may include but are not limited to :
Food preparation and Cooking (Hot and cold foods) in our production and pastry kitchens 
Individual practice - practical food preparation sessions with practical demonstrations from chef lecturers
Menu Planning
Theory based sessions and portfolio building.

Functional skills in Maths, English and ICT are also included at the appropriate individual level.

Entry requirements

3 GCSEs at grade E or a Diploma at Entry Level 3 or equivalent. 
Satisfactory assessment in English and maths + interview, suitable reference.

For students who have not yet achieved a grade C in Maths or English it is compulsory to study either Functional Skills or GCSE in each relevant subject. Attendance at these sessions are a vital part of your course to enhance your employability skills and prospects.


Each unit is assessed by a combination of externally set assignments and online multiple choice tests. Craft units are assessed by a series of practical assessments.

Future opportunities

VRQ Level 2 in Professional Cookery or NVQ Level 2 Diploma in Professional cookery or
an alternative qualification suitable for the individuals positive achievement.
