Professional Cookery Level 3 Diploma at Havering College of Further and Higher Education

Course description

The NVQ Level 3 professional cookery course offers you a natural progression route from the current NVQ level 2 programme. You will develop existing culinary skills to a higher leveland be introduced to new and more advanced food preparation and cooking techniques.The course will run over one day and one evening producing food for the public in our Jubilee Restaurant.

You will study both the theory and the practical elements of professional cookery. this will take place in the commercially run Jubilee restaurant at our Quarles campus.

Entry requirements

Candidates must have an NVQ Level two in food preparation and cooking or relevant experience and knowledge gained through employment.


Students are assessed by observation of students who demonstrate competence over a 16 unit programme, a completed portfolio of evidence and completion of all the theory on line test for the practical units completed.

Areas of study will include reduction sauces, terrines, advanced butchery techniques and fine desserts.

The compulsory units are Food Safety and Kitchen Management.

Future opportunities

Progression may be possible to a cookery related level 4 course or a hospitality management programme.
