This qualification is structured to enable you to work with a wide range of commodities in the preparation, cooking and presentation of dishes in a professional kitchen.
You will complete a variety of units covering all aspects of catering which will include:

- Meats and offal
- Fish and shellfish
- Rice, pasta, grains and eggs
- Hot and cold desserts and puddings
- Paste products
- Fermented dough
- Food safety in catering
- Healthy foods and special diets
- Catering operations
The practical elements of this course are assessed by means of timed assessments, the preparation and cooking of individual and multiple dishes. Other types of assessment include research assignments, written question papers, small projects and presentations.
