Professional Cookery NVQ Level 3 at Northbrook College Sussex

Course description

You will be either working in our industrial kitchens with a trained chef lecturer developing an array of kitchen skills and techniques, or serving food produced in either our coffee shop or fine dining restaurant, where you will develop food service skills as well as customer care, bar and cashiering experience. Please note that Level 3 students will study Professional Cookery only.


Visits to local hotels and restaurants, as well as other local catering establishments, will broaden your knowledge of the industry.


You will also have the opportunity to enter regional cookery competitions, cater for community events and work with celebrity chefs.


This course is mainly practical, working within our production and training kitchens.You will have input on designing menus and the units you wish to take to achieve the qualification. Working with experienced chef lecturers, the course is aimed at extending you to achieve your full potential and to think outside the box, creating diverse and interesting dishes. You are encouraged to work in local hospitality kitchens and, if you wish, you can become a programme-led apprentice.


In addition, students will be required to take either GCSE or Functional Skills (English, IT, Maths) at the required level.

Entry requirements

This course is for people who have successfully completed the Level 2 course (including Functional Skills requirements).

Assessment

Students will produce a portfolio of evidence which will include underpinning knowledge, a record of practical assessments in the kitchen and complete short answer tests.

Future opportunities

After 1 year at Level 3 you can achieve an NVQ in Professional Cookery Level 3. This means you can either seek employment or apply for higher education.
