AS/A level Food Technology at Garforth Academy

Course description

We offer AQA AS & A2 courses in Food Technology.

The focus of this course follows logically from a range of GCSE Food courses, with the added emphasis on consumer needs and industrial aspects.

At AS level students have 5 one hour lessons per week and students at A2 level have 4; both enjoy a double (2 hour) lesson each week as part of the timetable allocation, allowing for more rigorous and stimulating practical activities.

Course content

At AS the coursework takes the form of a portfolio of 3 individual projects, each addressing different assessment criteria. The focus is on developing a ‘new’ product for a specific target market, with much emphasis on investigative practical work and practical refinement of a successful outcome. Some recent projects have been based on Super Foods, Luxury desserts and Products for the special diets market, but ‘the possibilities are endless’!

At A2 students work on a single substantial project, where they independently identify a situation from which they formulate their own context, objectives and design brief. The Specifications for Design & Technology: Food Technology can be viewed on the AQA website.

AS Food Technology: main areas of study

* MATERIALS AND COMPONENTS: Macro and micronutrients; relationship between diet & health; energy balance: additives

* DESIGN AND MARKET INFLUENCES: current health factors; diet related disorders; dietary planning through life; current eating trends; new product development; social factors; environmental issues

* PROCESSES AND MANUFACTURE: food hygiene incl. current legislation; bacterial contamination; food labelling

A2 Food Technology: main areas of study, (building on AS knowledge base)

* MATERIALS AND COMPONENTS: application of food science and nutrition principles; in depth look at structure of , carbohydrates, protein; combining food materials in food processing; micro-organisms and enzymes

* DESIGN AND MARKET INFLUENCES: stages of food product development; marketing and promotion; product evaluation; influence of design & technology in society

* PROCESSES AND MANUFACTURE: preservation; quality control & assurance; industrial systems and control; current food legislation

Entry requirements

5 GCSEs at Grades 9-4 including

Grade C in GCSE Food Technology course (if taken)


The course structure is divided between coursework and theory for exam preparation. The exam and coursework elements account for 50% of each year, AS and A2.

A Level Food Technology is a compelling option for students who have an interest in food, whether in terms of hands-on practical preparation, cooking (and enjoying!) or in terms of wider food issues. The food industry is an enormous and ever-growing business that continues to afford a wealth of career opportunities, including product development, nutrition, dietetics, food marketing... This course invites young people to explore food beyond the obvious; it opens students’ eyes to what is in our food, (nutrition, sensory, ingredients, processes, etc.), as well as providing an appreciation of how it is mass produced, provoking them to question consumers’ relationships with food in its myriad forms. By understanding exact nutrition and sensory needs and how manufacturers strive to address them, students are able to equip themselves to make better informed food decisions through life, with every chance of extending that interest to food related careers and/or courses in Higher Education.
