Professional Cookery Apprenticeship Intermediate Level 2 at Derwentside College

Course description

Working with the training kitchen preparing and cooking food for Chapters Restaurant, the College’s training restaurant, and in your workplace, you will gain valuable hands-on experience.

It is run within the realistic working environment of a busy restaurant and is open to the public and college staff.

You will learn basic preparation and cookery methods practically as well as through theory related skills linked to the catering industry.

Course content

This course is made up of one main qualification NVQ Level 2 Diploma in Professional Cookery.

Examples of mandatory unit topic areas:

  • Health and Safety
  • Effective teamwork
  • Customer Service skills
  • Maintain Food Safety
  • Maintain and Handle Knives

Examples of optional unit topic areas:

  • Preparation and cooking of fish and meat
  • Preparation and cooking of soups and sauces

You will also be required to achieve Functional Skills English and Maths at Level 1.

Entry requirements

All learners starting an Intermediate Apprenticeship programme must be employed in the relevant vocational area at the start of their programme

An offer may be made subject to successful Initial Basic Skills Assessment which demonstrates at least working towards Level 1 English and Maths.

If the learner is assessed at below this level, an offer may be made on condition that the learner attends support workshops to achieve the required skills level


Underpinning knowledge is delivered in the theory lesson and is tested by a series of online testing.

Future opportunities

Successful completion of this qualification will also assist you to gain employment in your chosen area in the Hospitality, Food, Travel and Tourism, Health Care and Leisure industries.

You may be able to progress to: - Level 3 NVQ Diploma Professional Cookery or - Level 3 NVQ Diploma in Hospitality Supervision and Leadership - Level 3 Advanced Apprenticeship
